Food Recalls and our Gluten Free Diet

People who live gluten free are concerned about food issues, particularly those that result in the food being recalled by The Food and Drug Administration or The Agriculture Department. I’ve installed a “Food Safety Widget” in the right sidebar that will link you to detailed information about the three most recent recalls, as well as tips about food care. This is not a gluten free widget in the usual sense of the word. Many of our concerns about food are shared by everyone in the nation. The current peanut butter recall would be a good example of this.

Is Pepperoni Gluten Free?

Most pepperoni is gluten free, although it is still important to read every ingredient label every time. Hormel, Boar’s Head Meats, and Applegate Farms make an on-line commitment to provide a gluten free product. Some of you may enjoy the challenge of making your own pepperoni. If you do, keep in mind that it takes six weeks for the pepperoni to cure.

Is Hard Cider Gluten Free?

Yes it is, and Anheuser-Busch advertises their newly-introduced product ‘Michelob Ultra-Light Cider‘ as “… a light, refreshing alternative to white wine, champagne, and heavier ciders”. ‘Woodchuck Hard Cider‘ announces that their product is naturally gluten free. FYI, in order to access either of these sites, you have to convince the site that you are of legal drinking age. Does that answer your questions about the potency of gluten free hard cider?

Gluten … the Definition

The word “gluten” has at least two definitions:

♦ For persons who live with celiac disease or other forms of gluten sensitivity, “gluten” are the proteins in wheat, barley, and rye that cause problems for us.

♦ Farmers and food scientists (and the majority of other people), “gluten” refers to the proteins found in virtually all cereal grains.

Is Margarine Gluten Free?

Margarine is probably gluten free. Earth Balance  (which refers to its products as “buttery spreads’) and Land O’Lakes affirm on their websites that all their products are ‘safe’ for our consumption. Food Facts (dot com) shows photos of 79 gluten free margarines from 28 manufacturers.

Are Artificial Sweetners Gluten Free?

Many artificial sweeteners are gluten free. The websites for Equal, Splenda, Sweet ‘n Low, and Truvia all specify in the “Frequently Asked Questions” section of their website state that their product is gluten free. The NutraSweet website does not mention the subject.

This is not an unqualified endorsement of artificial sweeteners. There are many problems associated with them. However, apparently they are acceptable for people who live gluten free.

Is Coca Cola Gluten Free?

Coke’s website states that the product is gluten free, and that may well be the case. Certainly, the cola itself does not contain grains. The issue is with the caramel coloring that may or may not contain gluten. I’ve written about caramel coloring before. Caramel coloring is — indeed — a “dark subject”.

Is Pink Slime Gluten Free?

Yes, pink slime (officially known as “finely textured ground beef”) is gluten free.

I suspect that is the only positive thing to be said about it. Pink slime is scraps of meat ground up and treated with ammonia to destroy bacteria.

Are Grits Gluten Free?

Grits should be gluten free. Since the only grain involved is corn, a naturally gluten free product, cross-contamination accounts for any problems you find. Bob’s Red Mill and San Gennero Foods specify that their grits are gluten free. I have used grits from Quaker for years without problems. It’s interesting to note that the company I normally call Quaker Oats now labels itself with the single word ‘Quaker’.

Gluten Free Sushi Revisited

My three articles on gluten free sushi are among the most controversial posts on the website. I must confess that I am not a sushi fan but I do love a gluten ‘heated discussion’. In my first article, I quoted a gentleman who considered sushi a lifesaver. He has a point — inviting someone to share sushi is a lot ‘classier’ than serving them a gluten free meal. His favorite sushi restaurant is ‘The Magic Fingers Sushi Bar‘ in Atlanta. I’ve linked you the restaurant’s website even though it is currently ‘under construction’.

As far as I know, this sushi restaurant is the only one in the nation that claims on-line that it is gluten free. (Please leave a comment at the end of this article if you know of others)

I do know that there are many recipes on-line that will enable you to cook sushi at home. This one is designed for novice sushi makers. This recipe is both gluten free and vegetarian. This recipe is for California Rolls, which are like sushi except that they do not involve consuming raw fish.

Are Shirataki Noodles Gluten Free?

Shirataki noodles are gluten free. They are also low calorie (40 calories for an 8 ounce serving) and  almost completely fiber. If you are not familiar with these ‘miracle noodles’, click here and/or here for general information. They are different in taste, texture, and aroma from  noodles that you may be familiar with, so it is probably a good idea to use recipes designed for use with them. Is Tofu Gluten Free?

Yes! It is soy bean protein plus a curdling agent and is therefore gluten free (as well as vegetarian and vegan) unless wheat-based soy sauce or some other off-limited ingredients are cooked with it. Is Rugelach Gluten Free?

I tried my first rugelach during the recent holiday season. About all I knew about it was that it came in a container labeled ‘gluten free’ . I enjoyed it very much. I found out later that rugelach is an important part of Jewish cuisine, particularly during Hannukah, and that it is somewhat like a cinnamon roll, a puff pastry and/or a croissant.

Is Dried Fruit Gluten Free?

Dried fruit is almost certainly OK on the gluten free diet. I found nothing to suggest a problem. Of course, dried food is a food that has been processed at unsafe ingredients may have cross-contaminated the fruit. Fortunately, the dried fruit probably comes in a container with an ingredients list. Read that list, and — as the saying goes — “when in doubt leave it out”.

Here are links to recipes for gluten free fruitcake and gluten free trail mix bars. This writer recommends dried fruit as a “snack to keep in the car“. None of these experts suggest any reason for concern.

Is Cranberry Sauce Gluten Free?

Cranberry sauce is almost certainly gluten free. Ocean Spray assures us in the FAQ section of its website that cranberry sauce is ‘safe’ or at least that all its suppliers claim that their cranberry sauce is gluten free.

Fortunately, cranberry sauce is very easy to prepare at home and virtually anything that is homemade tastes better than something that comes out of a can. This article contains ten recipes for cranberry sauce. There are at least twenty You-Tube demonstrations available. Try this one — if you need another demonstration, click here. By the way, does anyone know the difference between “Christmas cranberry sauce” and regular cranberry sauce?
