Gluten Free Dining at Carrabba’s Italian Grill

Carrabba’s Italian Grill serves the gluten free communities in 32 states and is part of a restaurant group called Bloomin’ Brands which includes The Outback Steakhouse and The Bonefish Grill. These restaurants captured three of the five top spots in About.com’s effort to name America’s best gluten free restaurant chains for 2012.

Consider this statement from Carrabba’s gluten free menu: ” Many of our meats are cooked on the same grill. We do not have a gluten-free grill. Please see the item modifications below each item that are necessary to make the item gluten free. This menu and the information on it are provided by Carrabba’s Italian Grill, in cooperation with the Gluten intolerance Group (“GIG”), as a service to our customers. … Our management teams and service staff are not trained on the intricacies of Celiac Disease or gluten intolerance and cannot be expected to provide recommendations or other advice on this issue. All questions and requests for recommendations should be directed to GIG or the Carrabba’s corporate office.”

My reaction to this statement: We know from the first paragraph that Carrabba’s has been recognized for its excellent service to the gluten free community. We know that they have worked with the Gluten Intolerance Group and this respected organization is at least aware of the statements on this site. The Carrabba’s management has suggested that you contact GIG if you consider it appropriate.

The phrase the staff is not trained in “…the intricacies of celiac disease or gluten intolerance” is possibly confusing. Of course they aren’t, bu there should be someone in the restaurant who knows — for example — what is done to make the grill appropriate for both gluten free and conventional foods.
