These recipes can be prepared “Gluten Free in Five Minutes” by anyone who has access to a microwave and follows the super-simple directions in the book. The items taste fresh and homemade (because they are). After I finish this review, I am going to award myself with a gluten free brownie. The recipes are designed for one or two servings. No recipe requires more than one type of gluten free flour and none require xanthan gum.

This book seems to target people with  few cooking skills, a low budget, no access to a full kitchen, and little need to prepare things in large quantities. I think I’ll go have that brownie now, or maybe I’ll try an English muffin. Yes, this book will tell you how to make a single gluten free English muffin in your microwave.
