Here are two cooking demonstrations involving gluten free pumpkin pie. (The second demonstration is also vegan). Since our primary concern is the pie crust, you might want to use pecan or other holiday fillings or to even use your own recipe for pumpkin pie filling.

    When I make ‘pumpkin pie’ for my daughter, I just bake it in individual ramekins (lined muffin tins) and don’t worry about the crust. No complaints yet about not having crust!

  2. I really like the ingredients that are used for the second recipe. I didn’t know that chia seeds could be used to help baked good stick together. I have always used ground flax seeds in this way. Thanks for the demonstrations.
