More than 1000 celiac-friendly restaurants are listed have been approved and monitored by The Gluten Intolerance Group and listed at the Gluten Free Restaurant Awareness Program site.
The Celiac Sprue Association has given its "seal of recognition" to restaurants in Illinois, Ohio, and Michigan. In keeping with my goal of keeping all relavent information in the same place, I have included this information in the article about gluten free opportunities in the appropriate state.
Many restaurants declare on their websites that provide gluten free options. This self-certification is valuable, particularly in situations where an actual gluten free menu exists and/or one of the owners or managers is a celiac or has a family member who lives gluten free. The fact that restaurants commit themselves in writing is important; a restaurant owner will probably not risk a lawsuit to get our business. An owner with personal ties to the gluten free community is is likely to have the desire and the knowledge to serve our needs.
In summary, when planning a trip to any state, I suggest that you read about the state and also study the report of The Gluten Free Restaurant Awareness program.
