Montina is the trademarked name for gluten free flour milled in Montana from Indian Rice Grain. This grass is not related to rice or to wheat. Gluten free cooking exper Carol Fenster, PhD, says this about Montina: "…Indian rice grass, grown in the northwest. It rsembles whole wheat flakes and produces heavy, earthy bread, that makes great sandwiches." (Gluten-Free 101, page 61.)

I have already written about gluten-free-flour-alternatives amaranth, quinoa, and buckwheat. The next article in the series will cover corn, soy, and rice. These grains are familiar to almost everyone. I should have no trouble covering everything in one article. The last three articles in the series will feature tef, millet, and tapioca.
