Gluten Free Grains…Amaranth

I first heard about Amaranth while researching this gluten free blog. I discovered that it contains more protein than  any other celiac-friendly grain, more iron than wheat, and that it is a great source of lysine, calcium, magnesium, and dietary fiber. Check out this article for more reasons for including amaranth in the diet. Amaranth flour soaks up a great deal of moisture and there a product made exclusively from this flour would be rather dense but Amaranth is used in many flour mixtures. Here are recipes for Amaranth tortillas, pie crust, and pilaf. When browsing recipes, keep in mind that a recipe containing amaranth could be gluten toxic for other reasons.
