The Grainless Baker has triumphed with these gluten free baguettes. I’m not sure how this company chose its name — rice is definitely a grain and The Grainless Baker is certainlu the master at transforming rice flour into wonderful gluten free food that can be enjoyed by absolutely everyone. These baguettes are available frozen from The Gluten Free Mall.

The directions on the package tell us to let the baguettes thaw on the counter and then bake them. I was very disappointed in the one case where I tried to to use the microwave to speed up the process. This obviously is not a a criticism of the product; it is a comment on the folly of my impatience.

I enjoyed these baguettes. They are bit pricey for everyday use, but they may contribute something very special to those fine meals that should be part of every celiac disease diet.
