My Celiac Story…Kristine

"I never liked eating bread as a child.  I didn't know that it was because I couldn't tolerate it.  I thought everyone had a tummy ache after they ate bread and I couldn't see why anyone liked it.  I came from a good German-American family where "bread is the staff of life".  I used to surreptitiously throw away the bread from my sandwich as soon as I could sneak it outside. The family motto was "It is a sin to waste bread."

"When I left home, I was happy that I could eat the meat and cheese without the bread.  I did very well.  Then, my room-mate bought a bread machine and I almost died after I ate several pieces of her delicious whole-wheat hot bread. My throat swelled up and I grabbed for a glass of the nearest liquid to drink.  My doctor says it was a miracle that the drink happened to be a strong Vitamin C drink (about 10,000 mgs) and that it probably saved my life as it took down the swelling of my throat to a point where I could once more breathe.

"I have eliminated any possibility of contamination in the household as I only buy gluten-free products.  Initially, my husband complained that he missed his pasta and bread.  But soon he realized that the headaches he used to get were associated with gluten as they disappeared when he changed his diet.  Now, even when we go to restaurants he sticks with gluten-free. That was ten years ago.  And I can attest he looks younger now than he did then.  I guess a slight gluten sensitivity was enough to cause the dark circles under his eyes.
