The Gluten Free Diet…Can We Afford It?

I recently read an article titled “The Gluten Free Diet: Can Your Patients Afford It?” It made me think about myself and about all the visitors to this blog. Can we afford the gluten free diet? Celiac friendly food has always been relatively expensive. In these days when all food is becoming more expensive, finances could be one reason why newly-diagnosed celiacs would avoid “taking the plunge” and trying the gluten free diet.
The article makes two suggestions and gives many examples of ways to make these ideas work effectively:
Stress foods that are naturally gluten free. These foods tend to be less costly simply because there are more potential customers for them.
Find gluten free recipes that are relatively inexpensive. Emphasize “cooking from scratch”. That generally improves the quality of the meal and almost certainly reduces the cost.

My husband has a gluten intolerance (although still hasn't gotten tested for Celiacs disease) and up until recently, we've avoided making a lot of GF baked goods from scratch. The flours are expensive, and go rancid quickly and we don't have a lot of freezer space for them.
And then I realized that we usually keep oats, millet, quinoa, rice, etc…in their whole grain form on hand because they last forever, even on the pantry shelf. And while the flours are expensive, the whole grains aren't (relatively speaking). So I pulled out our coffee grinder, and ground my own GF flours. This way, I can grind only what I need for right now and save space in the freezer and save a bit of money as well.
