Digesting a Gluten Free Menu

Finding a restaurant with a gluten free menu is always a victory. Here are a few tips on how make that victory even greater.

  The menu may list gluten free pizza crust and/or gluten free pasta. This does not necessarily mean that gluten free sauces or toppings will automatically be added. Ask questions!!!!! Make the right choices.

  Check to find out whether non-gluten-free baking is done on the premises. Given reasonable care, the restaurant can be sure that gluten free products do not come in contact with “regular” food. It is much more difficult to prevent contamination from microscopic flour particles that have been circulating in the air.

 If possible, read the gluten free menu before you enter the restaurant. Your selections may be very limited. I have even situations where the only things declared gluten free were the condiments and salad dressings.

  Even if you have already studied the gluten free menu and have decided what to order, don’t indicate that fact to your waiter. Asking questions is probably the best way to evaluate whether the waiter standing in front of you has the knowledge or the desire to serve you,  You may know the restaurant’s official policy on the subject — but you also need some clues about your waiter.
