Almost all Thai cooking is gluten free, or at least it would be totally celiac friendly if it was being done in Thailand. Serious celiacs have to assume that all food cooked in an America restaurant is Americanized at least to some extent. The only totally safe solution is to “do it yourself” just as the people in this video are doing.
