My recent article “Gluten Free Sushi” evoked several interesting comments. Most sushi is naturally gluten free, but problems occur because soy sauce is a key component inpreparing and presenting this delicacy. Actually, almost anything can be prepared gluten free. The important questions are: Is it worth the effort to prepare gluten free sauce? Is it worth the risk to celiacs who may encounter sushi made with wheat-based soy sauce? Since I am not a sushi enthusiastic, I will not attempt to answer those questions. The people I quoted in my original article seemed to say “yes”; here is a link to an article that takes the opposite point-of-view. Make up your own mind! Can one ever be certain that sushi is being prepared gluten free?
Consider the preparation area and the utensils and the cleanliness of the preparer? How can one be certain?
Yes, the fish and the rice and the seaweed is naturally gluten free, but what about the preparation?
It is very difficult to be sure of what is being put forth…
any thoughts? I would love some feed back so we can address the issue of preparation…Thanks
