Our Gluten Free Choices

Writing about gluten free food is not easy. I have not eaten “normal” (that is, wheat based) baked goods, pasta, breaded meat, etc. since August, 1999. For at least two years before that, my thoughts on food were distorted by my as-yet undiagnosed celiac disease. How can I possibly remember what food tasted like a decade or more ago? I know that I enjoyed food in the twentieth century, but I have no specific recollections.

  After my diagnosis, I spent at least seven years loving absolutely every food contained no gluten-bombs. Anything was better than nothing. I’m sure that some of you are in that phase right now.

  But now I realize that I have choices and so do all of you. Gluten free food becomes more and more available each day; so dies the  information about what we can and can’t eat. I HAVE CHOICES, and my sense is that you — my visitors — would like to read both the facts that I have dug up on the internet and my opinions about my celiac experience.

  So, I am getting this head start on my New Years resolutions. This year I will attempt to write about every gluten free experience that I have. I won’t repeat the articles even if I repeat the experience, but I will modify articles when I need too.

  One technical problem here: Many of my articles will be very short, perhaps only two or three sentences. As a retired English teacher, this offends me but I know it’s for the best. I could combine two or more subjects in one article, but if I do that, Google and the other search engines will only the first subject in the article. Since most of you use search engines to contact this site, the other subjects would never get the attention they deserve.

  A related problem: the number of articles in this blog will increase rapidly in the near future. I need some sort of index to keep my own head on straight. You need an index to enable you to wade through the vast amount of material on this site; and the amount of material will increase daily. How do I solve this problem? By trial-and-error; there is no other way. Please bear with me during this experiment.
