I recently enjoyed a spice cake prepared from the "spice cake and gingerbread mix" that is available from The Gluten Free Pantry. The package contains instructions for making the cake dairy free and directions for making carrot cake, gingerbread, as well as molasses cookies. The cake stayed moist and delicious during the three days between its creation and its consumption.
