I recently discovered a recipe for celiac friendly salmon-pasta salad. I enjoyed the recipe, but what I really loved was the fact that I could also watch a video clip of the salad being prepared and print out a complete transcript of the video. The site did a marvelous job of taking the mystery out gluten free cooking. There were several other pasta recipes in the same article, and I see no reason why they could not be made celiac friendly simply by using gluten free pasta boiled in water that has not been used to cook anything gluten toxic.

After eight years on the gluten free diet, I'm still not comfortable cooking gluten free (or any other way for that matter). I'll keep my eyes open for more articles like this. If you know of any, please e-mail me at gfceliac@gmail.com.
