I have a million questions about the celiac diet and lifestyle. There are lots of answers on the internet, but questions remain. People visiting my site have posed lots of questions that I can’t answer. I thought I would share some of those questions and invite your response. I’ll publish what you send me. Right now, my site sometimes offers you the chance to leave a comment and sometimes it doesn’t. My guru promises me that he is "working on it". You can always use e-mail.
I’ll ask new questions and get new answers every day. I’ll place the questions on a special page called "Gluten Free Questions and Answers", add new questions as they come up, and also add the solutions that you provide. When I have enough information, I’ll publish separate articles.
Here are the questions that I am currently pondering:
Is there a subsitute for gelatin in recipes? Some of our visitors use the vegan diet and therefore must avoid gelatin.
Can anyone recommend any gluten free fish and lobster restaurants on the New England coast? I’ve written about all of the New England states but have recommended very few restaurants that people could not patronize in Kansas. I apologize for that. Are there any special cross contamination issues related to seafood?
We are all concerned about living gluten free and many of us would like to do everything we can to "save the planet". Are there any direct connections between "living celiac" and "living gluten free"?
I regularly receive e-mails from persons who have just been diagnosed with celiac disease, told to go on a gluten free diet, and then left to their own resources. I remember that pain. What are the most important things for me to tell them?
