I reviewed and totally enjoyed Authentic Foods Blueberry Muffin Mix. It’s gluten free, wheat free, soy free, peanut free, and kosher. It is available from The Gluten Free Mall.
The mix was easy to prepare and produced great results. I loved its flavor and texture, as well as its ability to stay moist for at least two days. I would have appreciated more blue berries, and the next time I try this product I’ll consider adding dried fruit, nuts, or other mix-ins. Last week I reviewed Authentic Foods Pancake and Baking Mix using the muffin recipe on the package. Both sets of muffins had very different tastes because they were made with different combinations of flours; but both were very enjoyable. Keep them on hand to deal with any muffin-y situation that comes up in your gluten free diet.

One final note: I consumed the last of the muffins three days after I prepared them. Of course, they taste better fresh, but these muffins were certainly OK.
