Gluten Free Pancake and Baking Mix by Authentic Foods - Product Review

I recently enjoyed reviewing the Pancake and Baking Mix produced by Authentic Foods and available from The Gluten Free Mall.
The mix is manufactured in a “gluten free environment” and is wheat free, gluten free, dairy free, and nut free. The main ingredients are garfava beans and brown rice flour. (Garfava flour is made from garbanzo beans and chickpeas. I had to look up that fact before I wrote the review.) This combination of flours gave the pancakes a “different taste”, quite unlike the rice flour taste that seems to dominate the world of gluten free cooking. I’m not criticizing either “taste”; as a matter of fact I loved it and will certainly be having more. And certainly, the celiac disease diet needs all the variety that we can bring to it.
I followed directions to-the-letter as I always do on my first attempt. The pancakes were a bit thin for my taste. I solved that problem completely by adding more mix to the batter. The direction to make four inch pancakes needs to be followed carefully. The larger pancakes were very hard to turn over.
I tried the muffin recipe on the package and got excellent results. Here again, the “different taste” was an asset.
My schedule of foods to be reviewed includes another pancake mix as well as another muffin mix. I’ll make comparisons after I review these items.
