Keeping Gluten Free Bread Fresh

I’m the only celiac at my house so a loaf of gluten free bread tends to get hard and stale before I finish it. Storing it in a tupprware container helps but I have found a better solution. Keep the bread in the freezer. When you need bread or toast, break off a slice or two and put it in the toaster. It will thaw and become quite moist and tasty. Unless you actually want toast, don’t leave the bread in the toaster until it actually changes color. The warmed and thawed bread will have a great taste and texture.

I’ve tried this using the brown rice bread that is sold at Trader Joe’s. Other breads may produce different results, so please let me know how your experiment turns out.
