Gluten Free Living Under Emergency Conditions

UPDATED 5/17/07 Again this season, emergencies will occur and celiacs will be living living in homeless shelters after hurricanes or other disasters. Realistically, providing a gluten free diet will be far down on the list of official concerns. As is so often the case, we will need to care for ourselves. We need to plan ahead! Here’s an idea that has never been tested under fire but makes sense to me:

I intend to buy several cases of Ancient Harvest gluten free pasta from The Gluten Free Mall. I’ll write the date received on each case, eat the pasta from the cases starting with the items that have been in my pantry the longest, and always keep several cases in reserve.

Why am I choosing pasta? Pasta requires no refrigeration and can be stored for a relatively long time as long as the packages remain unopened. I enjoy pasta.

Why will I order from the Gluten Free Mall? They offer a 10% bulk discount when you order ten or more identical items. This company offers a wide variety of products. I can replenish my emergency stockpile and do most of my gluten free shopping at the same time, thus reducing the shipping cost per item.

Why did I choose Ancient Harvest pasta? Actually, the brand is unimportant. Choose something that you enjoy. Ancient Harvest products are a blend of corn and quinoa and have a very "normal" taste. If you elect to share, you will be able to cook one meal that will satisfy everyone. This link will take you to the Pastas/Noodles from the Gluten Free Mall page. It’s a great place to start shopping for your emergency stockpile. Remember that the Gluten Free Mall is a huge site. Keep shopping until you have met all your gluten free needs. That will significantly reduce your shipping-cost-per-item.

You will also need a supply of sauce packets to add variety to your "emergency diet". My favorite packets are available on-line from Mayacamas Fine Foods. Add several packets of shredded cheese to you emergency stash and I will be ready for whatever Mother Nature throws at us. I pray that we will never need to put this system to "the test", but it is best to be prepared. 

I hope I never have to test this idea. But it is certainly best to be prepared.
