Disney Theme Parks are indeed Magic Kingdoms, even for celiacs. Celiac support groups in areas near both Disneyland and Disneyworld have prepared guidelines for dining gluten free at these wonderful resorts.

"Gluten Free in San Diego", an affiliate of the Celiac Sprue Association, worked with Chef Chris Justesen, who is responsible for all restaurant operations at Disneyland to develop a series of guidelines for a great gluten vacation in Disneyland and Disney California Adventure.  

I discovered two articles describing adventures at Disney World in Florida. One is dated March 2004. The other article describes the dining experiences of four different guests, the most recent visit was in February 2007.
