Two Great Gluten Free Recipes

UPDATED 6/22/07 Recipes for the gluten intolerant abound in books and on the internet The recipes I am about to to recommend are very special because: • they are photographed in a way that makes your mouth water. • they are describe in a way that reassures you that you are dealing with a person who knows how it feels like to be gluten intolerant and is enthusiastic about gluten free cooking. My first suggestion is called — would you believe? — Pesto Zuchini Tomato Gratin and is featured on a blog called — are you ready for this? — Recipes from a Gluten Free Goddess. My second suggestion, gluten free pumpkin cupcakes is featured on a blog called Elise.com. Browse through this site for other fantastic recipes but be aware that all the featured recipes are not gluten free. As always, celiacs need to read directions carefully.

In case you are wondering what a blog is, relax. You’re reading one right now. A blog is a website that is relatively unstructured and informal, better suited to the individual enthusiast than the large corporation. Actually, the difference is seldom important.
